You don’t often see gingerbread sweetened with honey. But why?
If you look up any classic gingerbread recipe on Google right now, more likely than not, it’s going to require molasses and/or brown sugar. Traditionally, gingerbread is sweetened with molasses, which gives it that rich, caramel flavour. Ours, however, is sweetened only with 100% Australian Honey. It’s part of our well-guarded family recipe, but we don’t think it’s giving away too much to tell you that it’s been key to the success of our gingerbread.
So, what is it about Australian Honey that makes it so good?
Australian Honey is safer to consume than imported honey
You might not know it, but Australia has some of the highest standards for food production in the world right now. There are strict rules in place to regulate the bee-keeping process, from how the bees are managed to lessening the impact on the environment and preventing disease. Australian bee-keepers follow a code of practice that keeps our honey far safer to consume than honey that’s made elsewhere. It’s no wonder we export so much of it!
Australian Honey tastes better
Pure Australian Honey varieties have a range of unique flavours. Sugar gum will be sweeter, whereas the one-sided bottlebrush has more of a dark molasses flavour. These flavours also vary throughout the seasons, as the weather affects which plants the bees are harvesting from. The distinct taste of Australian Honey is what gives our gingerbread that subtle sweetness you can’t get enough of.
Australian Honey is good for you
Australian Honey is packed full of antioxidants, enzymes and beneficial bacteria that support digestion and gut health. Most of the antioxidants in honey also have anti-inflammatory properties and may help reduce the risk of chronic diseases. And while a teaspoon of honey has slightly more calories than a teaspoon of refined sugar, it’s sweeter than sugar so you need less of it (which makes our guilt-free treats even better!).
